Where are we fishing our anchovies and longfin?
Our Cantabrian anchovies belong to the Engraulis Encrasicolus speciment, captured in the fishing grounds (FAO 27) of the Cantabrian Sea during the coastal of spring, when the fat balance is optimal so they become the most sought after and tasty in sardines in the market.
Our longfin tuna is caught with fishing rod by the Cantabrian fishing fleet. We choose the best fish in the Fresh Fish Market and we elaborate it handcrafted in our manufacture in Santoña.
We guarantee and certify all our products from Cantabrian Sea.
How and Where your products are elaborated?
We elaborate all our products in our manufacture in santoña, Cantabria. We control and respect every step in our handcrafted products To make them we only use the best possible raw materials: sea salt, organic butter and extra virgin oil.
Do the anchovies contain salt?
We start an artisanal process of maturing them in salt for a period that goes from 12 to 15 months. Then, after they are cured, we remove the skin, scales, thorns and excess salt, “rubbing” each one by hand. Finally our experts carve and dry them in the traditional way. We never add salt after the process.
We have a special edition” low salt anchovies, “This product is characterized for having 40% less salt than our regular product after being subjected to an additional wash. The same quality, flavour and texture of its loins is maintained.
Are anchovies, anchovies in vinager and longfin tuna blue fish?
Absolutely yes. It is recommended to consume blue fish three times a week to maintain the omega 3 and vitamins, very important for health.

Which products must be kept in the fridge?
Anchovies must be refrigerated between 5º C up to 12ºC.
Anchovies in vinager must be refrigerated between 4ºC up to 8ºC.
The rest of our products, once opened, must be refrigerated and it is advised to consume before 5 days.
Are anchovies in vinager CHABUCA® free of anisakis?
Absolutely yes. Our anchovies in vinegar are subject to a prior freeze of -20ºC no less than 3 days.
